Custody
Who holds the keys to your coins: a company for you, or you yourself.
With custodial services, such as most exchanges, a company holds the keys and you hold its promise. With self-custody, you hold the keys in your own wallet. Nobody can freeze your coins then, but nobody can rescue you if you lose the keys.
